Are there less interactions or could I simply keep them as kittens/puppies and still get the full experience?

If you keep them as kittens and puppies, you will miss out on the full experience. Kittens and puppies cannot go on stairs, so you'll constantly run into that problem with them wanting to go outside and use the restroom. Plus, kittens and puppies are quite limited in their functions and mobility. For puppies, you can't roughhouse or take them on a walk and do other really involved activities unless they are aged up. You're pretty much limited to them eating, wanting attention, and picking them up if you keep them as kittens and puppies.
